About the Author

Terry Lee Madere

Recipes of a Cajun Terry Madere, aka “T-Lee” was born in New Orleans, Louisiana in 1959. Married to Rachal Anne Plauche’ Madere since 1979, a beautiful lady from Plaucheville, La. I have three wonderful children, Shawn, Tonya and Angela. They have given us 11 grandchildren that gives us the greatest joy of being grandparents. Well, I’ve been interested in the world of culinary for a long time and one day, I just had to start cooking and now, I can’t stop. So, now, I have decided to write down a few of the recipes that I love to cook and hoping this will help you along your way. I have cooked for family and friends and all over the country, from one end to another. Working for a company that sends me from state to state allows me to cook for people that are not familiar to the Louisiana taste. This allowed me to show them just what they’re missing here in Louisiana. Other than being with family, there’s nothing more I love doing than cooking. Before passing away, my brother Ronnie was a great chef at a favorite restaurant in New Orleans. I guess I can say I’ve picked up a few things from him along the way, as he did from me. I do miss my brother; he was the funny one. When it came to singing, laughing, cooking and dancing, he was like no other. I’d like to thank my family for being my guinea pigs for the trials and errors of these recipes. If it wasn’t for them, there wouldn’t be me. So if you love cooking and eating with great flavors (as much as we love to, you’re going to have a great time with these recipes. So I hope you enjoy this cookbook as much as I have writing them down for you. I like to dedicate this cookbook to my wife, Rachal Madere and my family who helped me with this cookbook and who is dearest to my heart. – T-LEE
