Imagine cutting food with a prison ID, shredding cheese with a plastic fork, having only a microwave, no legitimate utensils and limited food items available to prepare food. This one-of-a kind cookbook is truly amazing because of the creative women who contributed to it. Women, whose ingenuity is remarkable and found unique ways to produce distinctive recipes under limited circumstances.
Who are these women? They belong to CARE I, a program of Changed Choices Inc., an organization with offices in Charlotte NC. Changed Choices is a comprehensive, wrap-around program that begins working with a woman during incarceration and follows her into reentry. CARE I (Comprehensive     Approach to Re-Entry) is the program for the incarcerated women and CARE II assists the women upon release. Over 250 faithful volunteers and the dedicated staff provide a mentoring environment, resulting in a less than 4% recidivism rate for the clients. (The average recidivism rate in North Carolina is 40%.)
The foods that appear in this book were often made to bring several women together to celebrate birthdays, upcoming release dates or simply as an opportunity to share together. Such a community effort allows for a sense of family and normalcy. Food brings us together as a human race; it brings us together to fellowship, show love, learn, and eat well.  This is an important part of life for CARE I women as they share with each other, and now with you.  

Several adaptations in creating these dishes:

  • Shred cheese, using a plastic fork or spork.
  • Slice with a plastic knife or a prison ID card.
  • Cookies can be crushed using the top of a mayo plastic “jar”.
  • Although some of the quantities listed are vague, “ex-offenders know the measurements automatically”.


The Amazing! Cookbook is dedicated to the many committed volunteers and staff of Changed Choices.  Interspersed throughout, you will find words of heartfelt gratitude for the many ways that volunteers and staff make a difference in the lives of our Changed Choices CARE I women.

Breakfast Pizza
 
Ingredients:

  • Tortilla
  • Powdered eggs
  • Block cheese
  • Sausage

Directions:
  1. Place tortilla in microwave for 30 seconds to make it crisp.
  2. Mix eggs with water according to directions.
  3. Shred cheese – enough to cover tortilla.
  4. Cut sausage into small pieces, enough for tortilla.
  5. Spread eggs, cheese, and sausage over tortilla.
  6. Place in microwave for 20-30 seconds to melt.

Women of Changed Choices CARE I

This book is truly a collaborative effort that demonstrates the unity and supportive nature of the Changed Choices family.  It was designed as a surprise for the new Pre-Release Manager, Lindsay Knuckles, but evolved into a thank you for all staff and volunteers who make Changed Choices a unique and thriving organization. 
The people responsible for the content of this book are the women of Changed Choices CARE I who have shared their recipes with us as a token of their desire to give back what has so freely been given to them. They are indeed a resourceful, intelligent, determined and creative group and the recipes are a demonstration of that.  From the very beginning there was excitement and the pooling of recipes and ideas resulting in what is now available. A tremendous amount of admiration and respect is due the women you will meet in this book.

The relationships established are long lasting.  The Changed Choices "family" develops ties that continue for years and include the families of the clients as well.  Clients, Staff, Volunteers, Board members and Supporters all make up the Changed Choices family!
